How much drains before pressing, and does the planned steep remain intact?

### Resistance

Can the brew be pressed slowly and gently without instability?

### Strength

Is the finished drink more or less concentrated than the target?

### Extraction character

Treat these as sensory observations, not laboratory extraction measurements or universal diagnoses.

## Five-step dial-in protocol

### 1. Name the complete baseline

Record coffee, dose, brew water, temperature, filter, agitation, steep, press, bypass, grinder model, burr context, zero procedure, and setting.

### 2. Brew the same setting twice

Confirm that flow, press resistance, output, and taste are repeatable enough for a grind comparison to teach you anything.

### 3. Separate strength from extraction character

A cup can be weak yet harsh or strong yet sharp. Record concentration and flavor direction separately before choosing a grind move.

### 4. Move one local step

Go finer or coarser by the smallest practical repeatable adjustment; keep dose, water, time, temperature, filter, agitation, and service fixed.

### 5. Confirm the result

Repeat the better setting, taste at a comparable temperature, and keep it only if the improvement survives the second brew without unsafe resistance.

## Medium-fine is a starting region, not a specification

The most useful default is visual and operational: finer than common drip coffee, coarser than true espresso, and still easy to press gently.

Current AeroPress guidance places the default at medium-fine. It describes that point as number four on a five-part scale between drip at three and espresso at five. That is enough to choose a sensible first texture, but it is not a sieve result, a micron target, or a promise that two grinders marked medium-fine create the same distribution. Burr geometry, zero point, wear, alignment, coffee, and retained fines all change the physical result.

The current getting-started instructions make a useful distinction: store-bought pre-ground coffee can begin at medium, while fresh-ground coffee begins at medium-fine. This means a brewer does not need to abandon a bag merely because it was prepared for drip. The practical question becomes whether the recipe's flow, contact time, strength, and taste remain controllable—not whether the label perfectly matches an idealized chart.

Treat pressability as part of the definition. A setting that produces a tasty cup once but requires excessive force is not a dependable baseline. Current manufacturer help links very fine particles and broad, dusty distributions to blocked flow. ## Read four observation lanes before choosing a direction

Flow, resistance, strength, and extraction character answer different questions; collapsing them into one good/bad score creates contradictory advice.

Flow describes how the water moves through the current filter and coffee bed. Resistance describes whether the bed can be pressed slowly and safely. Strength describes beverage concentration, which also depends on dose, brew water, retained water, output, bypass, milk, and final mass. Extraction character is the sensory direction of the dissolved coffee and can present as hollow, sharp, rounded, drying, or harsh. One cup can be weak and harsh at the same time, so 'weak means grind finer' is not a complete diagnosis.

Before changing grind, write the dose, brew water, final output or final beverage mass, filter, temperature, agitation, steep, press start, press duration, and serving temperature. If the weak cup also used extra bypass or a smaller dose, ratio may own the first correction. If the brew tasted different only when much hotter, the comparison temperature may be the hidden variable. If the press suddenly binds with a previously successful setting, mechanical troubleshooting should precede taste tuning.

Brew Supply's rule is to choose the smallest move supported by at least two observations. A mechanically easy brew with fast early flow and a hollow cooled cup can justify one finer step. ## Grind only makes sense inside the recipe architecture

Dose, water, time, temperature, agitation, filter, press, and dilution can amplify or offset a grind change.

Finer particles expose more surface and usually create more resistance; coarser particles expose less surface and usually allow easier flow. But the cup result also depends on how long water and coffee remain together, how vigorously the slurry moves, the coffee-to-water relationship, and what happens after pressing. A fine short concentrate and a medium-fine full cup can both be internally coherent. Neither setting is globally better.

When moving finer, do not quietly shorten the steep, reduce the dose, change the filter, and press faster in the same brew. ## Changing the filter requires a new baseline

Paper, reusable metal, and a Flow Control cap alter the flow path, so the successful grind from one system is evidence—not a guarantee—for another.

AeroPress states that its metal filter is more porous than paper and can flow somewhat faster. Its help article suggests that experienced users test a slightly finer grind, level the bed, and pour slowly when that faster flow is unwanted. Make that a small paired comparison: same coffee, dose, water, time, agitation, press, and service, with the filter and one grind step recorded explicitly.

Do not turn the advice into a blanket claim about all reusable filters. Hole geometry, mesh, material, thickness, fit, and cap pairing vary across products. ## A grinder click is a local coordinate

Published starting numbers are useful labels only when the named hardware and zero procedure match the grinder in front of you.

The current AeroPress grind guide lists starting points for several grinders, and the company's own manual grinder has a factory-set medium-fine coordinate. These numbers reduce search time for the named systems. They do not establish equivalence across burrs or brands. Even within a product family, generations, burr swaps, adjustment mechanisms, recalibration, and zero definitions can change what the same numeral produces.

Before copying a number, name the grinder model, burr, internal or external adjustment, click count per rotation, and zero method. Check whether the source counts from burr lock, burr touch, the first free-handle point, or a factory reference. If those facts do not match, translate the intended brew behavior rather than the numeral. Start in your grinder's documented AeroPress region and use the two-brew baseline protocol.

## Use pre-ground and blade-ground coffee honestly

Limited control changes the experiment, but it does not make useful brewing impossible.

With pre-ground coffee, you cannot move one local grinder step. If a blade or dull grinder creates visible dust plus large fragments, changing average-looking texture may not resolve both fast flow and hard pressing. Record the distribution problem.
