# How Long Should You Press an AeroPress?

There is no single AeroPress press time, because press start and press duration are different decisions. In the audited 2025 sample, documented primary press starts ranged from 50 to 160 seconds, while exact press durations ranged from 15 to 60 seconds. For a new home recipe, 20–40 seconds is a practical press-duration starting window—not a universal optimum.

Scope: The 2025 evidence covers 23 of 66 finalists. The historical comparison is a separate archive of 46 available podium recipes from 2009–2025. Neither dataset isolates press time as the reason a recipe tasted better or placed.

## Key definitions

### Press start
The elapsed recipe time when downward pressing begins. It locates the transition from steeping or agitation into the press phase.

### Press duration
The time spent moving the plunger through the intended press. This is the number meant by a 20-second or 30-second press.

### Total recipe time
The elapsed time from the recipe's chosen timer start through its documented brew endpoint. It is not another name for press duration.

### Press endpoint
The event that ends the press: first hiss, end of hiss, a plunger position, a target output mass, or another explicit stopping rule.

## A useful press instruction needs three parts

Brew Supply treats the press as a start time, a duration, and an endpoint. Leave out one of those and another brewer has to guess.

“Start pressing at 1:30, press for 30 seconds, and stop at the first hiss” is reproducible enough to test. “Press slowly” is not. Slow could mean 20 seconds for one person and 60 seconds for another, and neither instruction says whether the brewer stopped early, pushed through the hiss, or targeted a measured amount of coffee in the server.

The distinction matters even if the recipe tastes good. Dial-in depends on comparing brews. If press start, duration, and endpoint move together while grind or temperature is also changing, the tasting result cannot be assigned cleanly to the variable you meant to test.

A practical opinion from Brew Supply is to write the endpoint before you write an adjective. “Gentle” can still describe the feel, but the timer and stopping rule do more work when someone tries to repeat the recipe tomorrow.

## The 2025 recipes had a soft center, not one schedule

Among primary 2025 records, press start had a median of 90 seconds and a middle 50% from 89.5 to 102.5 seconds. Exact press duration had a median of 30 seconds and a middle 50% from 27.5 to 32.5 seconds.

The full primary ranges were much wider: 50–160 seconds for press start across 19 recipes, and 15–60 seconds for exact press duration across 15 recipes. The middle intervals show why a 90-second start and 30-second press can be a recognizable competition-style center without becoming a rule or an optimum.

All competitors in the 2025 final used the same coffee, but their water allocation, temperature, agitation, filtration, pressing, and service systems still differed. A 30-second median therefore describes the available records; it does not prove that 30 seconds extracts better or produces a higher-scoring cup.

The useful lesson is narrower: serious recipes often specify a press duration, and the values are testable. Choose one duration, hold the endpoint steady, and learn what that schedule does inside your own recipe rather than copying the sample median as a championship secret.

## Written recipes often under-described the press

11 of 23 available 2025 records gave a timed press but left the endpoint unstated, while 6 were under-specified more broadly.

That documentation gap is easy to overlook. Two brewers can both record a 30-second press while expressing different amounts of coffee, ending at different plunger positions, or treating the hiss differently. Duration is real information, but it does not capture force, flow-rate changes, bed resistance, output mass, or the stopping rule.

Only a small part of the sample paired timing with a named endpoint: 3 exact timed records also named the hiss, 1 exact timed record stopped before it, and 1 record controlled output and rate. One additional hiss-timed record relied on estimated timing. These are documentation categories, not rankings of recipe quality.

This is where Brew Supply's repeatability framing differs from a generic instruction to push more gently. The goal is not to make every press look laboratory-perfect. The goal is to notice which part of the press you have actually controlled and which part still depends on feel.

## The historical archive shows an even wider timing envelope

In the separate historical podium archive, documented press starts ranged from 15 to 180 seconds across 30 recipes, and documented press durations ranged from 10 to 75 seconds across 33 recipes.

The archive contains 46 available recipes across the 2009–2025 podium sequence. It is not pooled with the 2025 finalist sample. Rules, coffee, recipe conventions, and documentation changed across editions, so the historical 10–75-second duration range is context for what competitors recorded, not a larger experiment that identifies the best press.

Documented total brew time is different again. It ranged from 60 to 210 seconds across 28 historical records, but archive wording is inconsistent about whether dilution, cooling, or service steps are included. That is why this guide keeps total time out of the press-duration comparison.

The historical records are most useful here as an antidote to false precision. Competition recipes have succeeded with many timing structures. The practical task is to choose a coherent schedule and reproduce it, not to average unlike years into one supposedly ideal number.

## A practical starting schedule for a home recipe

If a recipe gives no press duration, start with 20–40 seconds, choose one exact target inside that window, and keep the endpoint unchanged for the next few brews.

A clean first test is to begin pressing after the recipe's chosen steep, aim for a 30-second press, and stop at the same cue each time. The first hiss is easy to hear; a target output mass or fixed plunger position can be more useful when the amount of pressed concentrate matters. None of those endpoints is automatically correct for every recipe—the important part is naming the one you used.

Do not shorten the steep just to preserve a favorite total-time number unless that is the experiment. Pressing is not a zero-contact cleanup step: water is still moving through the coffee bed during the plunge. When a 30-second press replaces a 15-second press, the recipe's contact profile has changed even if the press starts at the same clock time.

For a useful comparison, brew the same coffee twice with the same dose, grind, water, temperature, agitation, filter, press start, duration, and endpoint. If those two cups do not match, improve execution before testing a 10-second timing adjustment. Repeatability gives timing changes a chance to mean something.

- Write when the brew timer starts, usually first water contact.
- Write the clock time when pressing begins.
- Set a target press duration rather than only writing slowly.
- Name the endpoint: first hiss, end of hiss, position, or grams out.
- Record unusual resistance or a press that finished early.
- Keep bypass and final beverage targets separate from press duration.

## When the target duration fights the coffee bed

A timer cannot guarantee a stable press if grind, filter resistance, dose, or bed condition makes the plunger behave differently from brew to brew.

If the press becomes unexpectedly hard, do not force the brewer merely to hit the written duration. AeroPress's own troubleshooting guidance recommends gentle pressure and suggests a coarser grind when resistance remains excessive. That is a more controlled and legible correction than turning a 30-second target into a hard shove.

If the plunger falls much faster than planned, first check whether grind, filter setup, dose, and seal behavior match the prior brew. A quick press is not automatically a failed cup, but an unexplained change means the press phase is no longer controlled enough for a clean comparison.

This is also when output measurement earns its place. Time says how long you pressed; grams out says how much beverage reached the server. Either can be the primary control, but recording both exposes a press that met the clock target while producing a different amount of concentrate.

## What press time cannot tell you on its own

Press duration is one recipe variable. It cannot identify extraction, pressure, flow, cup quality, or winning potential by itself.

The WAC datasets do not provide a controlled experiment in which only press duration changed. Each recipe combines coffee dose, grind, water, temperature, agitation, filter, orientation, pressing, bypass, cooling, and service decisions. Placement cannot be assigned to one number from that system.

A shorter press can be appropriate for one grind and filter setup; a longer press can be appropriate for another. The honest recommendation is therefore procedural: choose a bounded duration, define the endpoint, observe resistance and output, and change one variable at a time.

If your only goal is an easy morning cup, that level of logging may be unnecessary. Use the official AeroPress method and press with gentle, constant pressure. The more detailed schedule becomes valuable when you are troubleshooting inconsistency, transferring a recipe, or preparing for comparison-heavy competition work.
