Stirring and swirling are different forms of AeroPress agitation and should not be added together. Those counts do not fully describe force, depth, timing, direction, amplitude, or tool shape. Choose the movement you can define and repeat, then test it while holding the rest of the recipe steady.

## Key definitions

### Stirring
Moving a paddle, spoon, or other tool through the slurry. A useful record names stroke count or duration, direction, depth, tool, timing, and intended task.

### Swirling
Moving the brewer so the slurry rotates without a tool passing through it. A useful record names rotations, direction, amplitude, timing, and settling pause.

### Count
A documented stroke or rotation total. It is a reproducibility coordinate, not a direct measure of agitation energy or extraction.

### Agitation protocol
The complete movement instruction: method, tool, timing, count or duration, direction, depth or amplitude, force cue, and settling behavior.

## A stir and a swirl are not interchangeable units

One moves a tool through the slurry; the other moves the brewer and liquid together. The same number can represent very different actions.

A five-stroke north-south-east-west pattern, five fast circles with a narrow spoon, and five slow rotations of the complete brewer are not three versions of the same dose of agitation. They differ in contact geometry, direction, speed, depth, amplitude, and how the coffee bed is displaced. Adding stir and swirl counts would create a precise-looking number with no stable physical meaning.

The audited report therefore keeps stir_count and swirl_count in separate fields. It also preserves evidence status. Némo Pop's directional instruction is safely derived as eight strokes; Dharun Vyas's four-to-five swirls appear as a 4.5 midpoint only in sensitivity analysis; one qualitative swirl event remains qualitative rather than being forced into a numeric value.

Brew Supply's practical rule is to write the movement as an instruction another brewer could execute. If 'stir five times' is the only note, add tool, path, depth, start time, duration, and force cue before treating it as repeatable.

## The two 2025 distributions answer different questions

Primary stir counts span 0–25 across n=19; primary swirl counts span 0–28 across n=20.

The primary stir distribution has a first quartile of 4, median 5, and third quartile 8.5. 3 primary records state zero stirs and 16 state a positive count. The range-midpoint record and three missing records remain outside those primary distribution statistics.

The primary swirl distribution has a first quartile and median of 0, a third quartile of 1.25, and a maximum of 28. 11 primary records state zero swirls and 9 state a positive count. Two numeric sensitivity records and one qualitative-only event remain visible but outside the primary summary.

The medians are not instructions. A zero median for swirling says that at least half of the primary written records stated no swirl; it does not show that swirling harms a cup. A five-stir median says where the middle documented count falls; it does not standardize movement or prove that five strokes extract best.

## The three podium recipes demonstrate different movement jobs

The known podium is useful for reading complete instructions, not for ranking agitation methods.

Némo Pop's official recipe specifies a directional NSNS-WEWE stir at 25 seconds. The audit encodes that sequence as eight safely derived strokes and records zero swirl. Jan Ahrend's official recipe specifies five NSWE stirs, then one controlled swirl after flipping the brewer at 1:30. Dharun Vyas's official recipe specifies no stir and four to five aggressive swirls to detach the coffee bed, followed by a settling pause.

These are three distinct jobs: deliberate directional mixing, a combined stir-and-settle workflow, and brewer motion used to detach and resettle the bed. They also sit inside different orientation, filter, grind, water, timing, pressing, and service systems. The three known placements cannot isolate whether any movement caused a placing.

Use a podium recipe as a movement specification only when you copy its surrounding context accurately enough to test. Do not translate eight directional strokes into eight circles, or a controlled settling swirl into several aggressive rotations, and assume the count preserved the technique.

## Count is useful only when the missing coordinates are controlled

Timing, direction, tool, depth, amplitude, duration, and force can change while the written count stays identical.

Record when agitation begins and ends relative to the pour, cap attachment, flip, and press. Name the tool and whether it reaches the lower slurry or only breaks the surface crust. For stirring, write the path—back-and-forth, cardinal directions, circles, or another repeatable sequence. For swirling, describe the brewer motion, approximate amplitude, rotation count, direction, and the pause before pressing.

Force words such as gentle, controlled, aggressive, or vigorous are qualitative. They still matter, but they need a local execution cue: the same hand, grip, vessel support, motion size, and duration. Video can help a training partner reproduce the movement when words and counts are insufficient.

AeroPress's current Signature Brew instruction uses a gentle stir for about three seconds, while other official recipes use different durations and motions. That provides a safe baseline example, not a universal optimum. The relevant question is whether the chosen protocol reliably wets, mixes, settles, and presses in the way your complete recipe requires.

- Method: stir, swirl, or a deliberately staged combination.
- Timing: start and finish relative to pour, seal, flip, and press.
- Geometry: tool, path, direction, depth, or brewer-motion amplitude.
- Dose: exact count or duration, plus a qualitative force cue.
- After-action: settling pause, cap step, flip, and press behavior.

## Run an agitation test that changes one movement coordinate

Start with the simpler protocol you can repeat twice, then change only the agitation method or one part of its specification.

Write the baseline coffee, dose, grind, water, temperature, pour, orientation, filter system, agitation protocol, press start, press duration, endpoint, output, bypass, final mass, cooling, and tasting temperature. Brew it twice. Record dry-pocket clearance, drip-through, bed settling, press resistance, press time, visible sediment, output, and the cup direction at a comparable serving temperature.

For a stir-versus-swirl test, keep timing and total agitation window as close as practical while changing only the movement family. Define both protocols before brewing—for example, a fixed directional stir sequence versus a fixed controlled brewer rotation and settling pause. Do not change grind to compensate until the movement comparison has been repeated.

Keep the method that is easier to execute and produces the more repeatable target cup. If both versions drift, reduce the protocol to fewer coordinates and test again. If press resistance or flow changes, record it as an observed system response rather than declaring an extraction mechanism the dataset did not measure.
