    How WAC Coffee Dose Changed from 2009 to 2025

    World AeroPress Championship podium doses changed in stages, not along one steady rise or fall. Available 2009–2015 recipes had a median dose of 17.75 g. The 2016–2019 median rose to 30 g, with all three 2019 podium recipes at 30–35 g. When the championship returned in 2021 under a confirmed 18 g maximum, all three podium recipes used 18 g; the 2021–2025 median remained 18 g. These are descriptive podium records, not proof that dose caused placement or that one period discovered a better recipe.

    Scope: The historical archive has 46 available podium recipes across 49 indexed positions. Dose is usable for n=45; one available 2009 recipe states a range and stays outside single-value summaries. There was no 2020 championship. Frozen annual rule text was not recovered for every historical year, so observed podium doses and documented maximums remain separate evidence types.

    The archive shows three dose stages

    The most useful summary is a low-to-moderate early spread, a high-dose concentrate period, and a rule-bounded modern period—not a single trend line.

    From 2009–2015, 18 of 19 available recipes have one usable dose. The median is 17.75 g and the observed range is 12–22.5 g. Those podium recipes used many water, grind, temperature, orientation, agitation, press, and service choices, so the dose summary does not make the period one coherent brewing style.

    From 2016–2019, all 12 available recipes have a usable dose. The median is 30 g and the range is 20–35 g. Ten of the twelve recipes are coded as high-dose concentrate plus bypass, which makes dose part of a broader water-allocation system rather than an isolated number.

    From 2021–2025, all 15 podium recipes have a usable dose. The median is 18 g and the range narrows to 16–18 g under the confirmed 18 g maximum. Water architecture and execution remained diverse even after the dose ceiling compressed one input.

    2009–2015 did not have one standard championship dose

    The early podium archive clusters around the high teens, but the usable records span 12–22.5 g and one ranged dose remains excluded.

    The available early recipes resist a tidy rule story. The dataset records observed recipe values, while formal annual dose rules were not located for those editions. A 20 g podium dose therefore proves that 20 g appeared in that competition context; it does not prove 20 g was the maximum or required dose.

    The single missing point matters. The 2009 winner source gives a range rather than one defensible chamber dose, so Brew Supply leaves it out of the median instead of selecting a midpoint. That makes the early dose denominator n=18 even though 19 podium recipes are available in the period.

    Dose also does not describe the cup by itself. Early recipes often put more of their stated water through the brewing stage, while later high-dose recipes commonly produced a concentrate and added bypass. Comparing 18 g in 2012 with 18 g in 2024 without the water and method fields would erase most of the recipe architecture.

    2016–2019 made 30 g-class concentrate recipes visible

    The period median rose to 30 g, while small coffee-contact water amounts and post-brew dilution often carried much of the structural work.

    The high-dose period includes doses from 20 to 35 g, but the median alone hides how concentrated the cluster became. Nine of the twelve podium recipes used at least 29.5 g. That pattern is a useful description of podium practice, not an experiment comparing dose while holding the coffee and method constant.

    A large dose was frequently paired with a small brew-water stage and substantial bypass. In that system, more coffee can create a concentrated intermediate brew while dilution, cooling, and final service determine the cup presented to judges. Copying only the dose discards the reason it may have fit the complete method—and can waste coffee without reproducing the intended beverage.

    The archive also cannot assign one cause to the high-dose period. Coffees, rules, recipe conventions, grinders, filtration, temperature strategy, judging conditions, and documentation changed together. Brew Supply treats the period as a real chronological pattern with multiple plausible influences, not proof that competitors steadily optimized toward 30 g.

    2019 to 2021 is a discontinuity, not a gradual decline

    The last pre-hiatus podium used 30 g, 35 g, and 30 g; the first post-hiatus podium used 18 g, 18 g, and 18 g.

    The 2019 first-, second-, and third-place recipes form the clearest high-dose snapshot in the archive. The official recipe archive documents all three values, along with concentrate-and-bypass methods. Those recipes show what reached the podium under the 2019 context; the highest observed value must not be relabeled as a 35 g formal cap without separate rule evidence.

    There was no 2020 championship. When the World Final resumed in 2021, the competition introduced a confirmed maximum of 18 g and every podium recipe used that amount. The archive provides no intervening event-year recipe sequence, so the shift should be described as a reset across the hiatus, not a smooth year-by-year fall.

    The rule change is a strong boundary on what competitors could choose, but it still does not explain every modern recipe decision. At most, the chronology supports that the ceiling removed the earlier 30–35 g option from 2021–2025. It does not prove why a particular competitor chose a water split, grinder setting, filter system, or service routine within that ceiling.

    2021–2025 compressed dose while the rest of the recipe stayed open

    Fourteen of fifteen modern podium recipes used 18 g, while the 2025 third-place recipe used 16 g and demonstrates that a cap is not a required target.

    All podium recipes from 2021 through 2024 used 18 g. In 2025, first and second also used 18 g, while third used 16 g. The period median and maximum therefore both equal 18 g, but the 16 g record preserves the distinction between a rule ceiling and competitor choice.

    The separate 2025 finalist audit reports exact primary dose values for n=21 of 25 available recipes from 66 official finalists. Its primary range is 16–18 g with an 18 g median. Those broader finalist records answer a different prevalence question and are not pooled into the historical podium timeline.

    Narrow dose does not mean narrow recipes. Modern podium methods still varied in brew water, bypass amount and timing, particle preparation, temperature, filters, orientation, agitation, pressing, cooling, and service. Dose history owns one axis of change; the report and recipe records are where that axis rejoins the complete system.

    Rules have to stay attached to their year

    The 18 g maximum belongs to 2021–2025; the current 2026 maximum is 20 g and must not be projected backward into the historical summaries.

    The source-of-truth rule timeline records a confirmed 18 g maximum from 2021 through 2025. Frozen annual rule pages were not recovered for every one of those years, so the page states that limitation even though competition-format evidence and the uninterrupted podium pattern strongly support the cap.

    The official 2026 rules now allow up to 20 g, require at least 150 g of brewed coffee, and set a 5-minute preparation, brewing, and presentation window. Those current constraints are useful for present-day preparation, but they do not rewrite what was allowed or observed in 2019, 2021, or 2025.

    Where a formal historical rule was not located, this page reports observed podium values rather than inventing a cap. Where a cap is documented, it is described as a maximum rather than an optimum. That evidence discipline is more useful than a seamless story because it tells a brewer exactly which claims are strong enough to carry into practice.

    Use dose history to frame a test, not to choose a winner's number

    Dose is a capacity and recipe-architecture decision before it is a taste claim; translate the full system and change one bounded question at a time.

    If you want to rebrew a historical recipe, start with the complete official instructions and record every substitution. Preserve the distinction between coffee weighed before preparation and coffee entering the chamber. Sifting or removing fines can make those values differ, and a grinder label or click count does not transfer cleanly across burrs and calibrations.

    For a dose comparison at home, hold coffee, final beverage target, water composition, broad contact-water ratio, temperature, agitation, filtration, press schedule, and tasting temperature as stable as practical. Compare a modest dose change, then adjust grind or water allocation in a separate round. If several controls move together, the result cannot tell you which choice changed the cup.

    Brew Supply's judgment is to read 30–35 g historical recipes as complete concentrate systems and 18 g modern recipes as methods designed inside a ceiling. Neither number deserves default status outside its coffee, rules, and workflow. The transferable lesson is to make dose explicit, explain what else changed with it, and measure the final drink rather than borrowing podium authority.
